A huge thank you to @mandyrennehan! It’s incredibly special and rare to meet someone as intuitive, thoughtful, caring and passionate as her. She brought me the most amazing gift today that had me in tears. Mandy, who nicknames everyone in her life, chose “The Black of Spades” for me and she designed and created this piece of art to showcase my “Professional Portrait of Legacy”, incorporating my life values: philanthropy, kindness, respect, responsibility and love.
Etched into the piece is: “The ace of spades is the most beautiful and spiritual card in the deck. She represents transformation by giving forgiveness and unconditional love to those not privileged. Her career ambition demonstrates respect, responsibility and values rooted in love. Her diamond symbolizes the epitome of personal growth. Turned upside down you can see the spade’s heart. Her black facade acts as a shade to her warm, angelic, existence.”

It was six o’clock on a weekday and even though I know it's not the time to have zero idea of what I'm going to make for dinner, I did. I mean I didn't know what to prepare for hubby, my toddler and school-age child who were about to enter the door any minute. I had just arrived home from yet another holiday gathering (I absolutely enjoyed) and remembered that it's my day to cook as hubby took our son to his French tutor.
No plan means boiling a pot of pasta and then tossing it around in a delicious sauce with fresh herbs. I always have go-to pantry staples like whole-wheat pasta. It cooks fast, is healthy and filling. I grabbed a bag of frozen veggies like organic edamame in shell @preschoice, it only takes 4-5 minutes to cook and my children love them. I grabbed my cook once eat all week bean salad from the fridge. And for desert, I served fruit with frozen yogurt because they ate all their meal (my kiddos, hubby isn't subjected to this rule or should he be 😆?). I see to it that even with the busiest of schedules my family and I eat home-cooked meals (most of the time 😉).
I'm planning what's for dinner a lot earlier today. I've taken out some chicken breast (that's already been cleaned and seasoned) to defrost for today's baked chicken meal. /
